Coco Invites You Inside Chanel's Minnie Mouse-Themed 1st Birthday Party

"Don't wait 'til the last minute is all I have to say!" she tells E! News exclusively

Coco went all out for Chanel's first birthday.

After first postponing her daughter's party due to the death of her dog Spartacus, Coco invited family and friends to celebrate Chanel's first 12 months at Sugar Factory in New York City Sunday. Only E! News was there as she explained how it all came together at the last minute (watch E! News tonight at 7 and 11 for all the exclusive details).

"The party planner had asked us, 'What is her favorite cartoon?' I was like, 'Pretty much anything Mickey or Minnie.' She just brightens her face up every time she sees them. So, I figured we'd just make it Minnie Mouse," Coco said. "And the funny thing is, I blended these outfits together late last night. This was not even supposed to be like a matchy-matchy thing."

Ice-T's Law & Order: SVU co-stars Kelli Gidish and Mariska Hargitay were among the attendees. Coco and Chanel weren't the only ones who modeled their looks after Minnie. "When my family came out—my mom, her sister and all her kids—they all brought red. It looks like we all went shopping together, when we didn't," Coco said. "It was literally a last minute thing. When you think of Minnie and Mickey, it's red and black and white. People just assumed to wear red."

Coco learned a lot during her first year of motherhood—like how to plan a 1-year-old's party. "I always wait until the last minute, and if you start early and start thinking of ideas beforehand, then you'll be right on target," she said. "I always wait until the last minute, so I'm always stressing and running around. 'Don't wait 'til the last minute,' is all I have to say!"

In many ways, motherhood hasn't been what Coco expected.

"It's weird that I never thought life would change, because I thought, 'Oh, I'll be the same Coco.' No. I'm a better Coco," she said. "Inside, I'm just more...I wouldn't even say 'compassionate.' I'm more aware of what I'm doing and my surroundings. Before, the old Coco was just like, 'Whatever! I'll do whatever just to have fun!' No. I've matured in a big way just because of her."

"I thought the toughest part would be not sleeping, because I really love my sleep," she added. "I'm not really a morning person. That transferred to her. She's not really a morning person. She goes to bed late like me, and she sleeps until like 10 o'clock—11 o'clock sometimes. I thought that was going to be it. The hardest thing? You know, I can't just do things on a whim anymore."

For example, finding time to exercise has been nearly impossible. Even though her gym has childcare services, Coco said Chanel "wants to be around me so long," making it unrealistic. "I could only be in the gym for 30 minutes at a time, so I have to really think out my day now," she told E! News. "Before I would just go and not think about anything else. Now it's all about her."

A stricter schedule meant Coco had to find other ways to tighten her famously taut tummy. "It's all about diet. It really is. Because I haven't really been able to go to the gym as much as I used to," the famously fit reality star admitted. "It's all about diet. You make your abs in the kitchen."
