Anna Boiardi’s Pressure Cooker Bolognese Recipe

During a cook-off against her mother, Anna Boiardi made this amazing recipe for Bolognese sauce.

In the first episode of Playing with Fire, Anna and her mother compete to see who can cook the best Bolognese sauce, and the guests at their dinner party will have to decide who the winner is.

Bolognese Sauce

(for 1  ¼ lbs pasta)

1 lb ground beef – 85% lean

1 medium onion chopped fine

1 carrot chopped fine

1 celery stalk chopped fine

1 28oz Italian Plum tomatoes – pureed with juices

1 tsp salt

½ tsp pepper

1 cup dry white wine

1 cup whole milk

1/8 tsp ground nutmeg

3 tbs extra virgin olive oil

2 tbs butter

Instructions

Put olive oil and butter in pressure cooker and heat over medium high heat.

Add onions and cook for 2 minutes. Add carrots and celery and mix well. Cook until vegetables are soft – about 5 minutes.

Add meat and break into small pieces with a wooden spoon.

Add salt and mix well.

Cook meat until no longer pink – about 12 minutes

Add wine and simmer until wine evaporates

Add milk and nutmeg and simmer until milk has evaporated – 12-15 minutes.

Add tomatoes.

Lock on lid and bring to pressure

Cook 1 hour
