Date night for Jessica Simpson and her man Eric Johnson!

The two were spotted leaving Chateau Marmont in West Hollywood, Calif. after enjoying a romantic evening out together sans their two children, Maxwell Drew and Ace Knute Johnson.

Simpson and her beau were snapped in their vehicle; the blond beauty sat in the front as her hubby-to-be took a seat in the back. The svelte mother of two appeared to be sporting a striped ensemble, wearing her long locks down in gorgeous cascading curls while her man looked casual in a navy blue tee.

Just two days prior, Simpson shared a pic of her future husband playing with little Maxwell on the beach and the two could not be a more adorable father-daughter duo.

"Maxi and Daddy at the beach. Yikes and Yay. Good Lord! She has NO fear!" Simpson captioned the sweet, yet scary, shot.

And after a fun-filled family day, it looks like mommy and daddy wanted to spend a little quality time together, as evidenced by their recent dinner date.

Simpson has been looking better than ever as of late and most recently showed off her super-fit figure on Sunday at the John Varvatos Stuart House Benefit in L.A. where she stunned in a bright yellow fitted dress.

The 33-year-old mom of two has worked hard to shed her baby weight (an estimated 60-70 pounds, according to one expert), and has named Maxwell as one of her favorite fitness partners.

A source told E! News that the proud mama's favorite form of cardio is running around after her mini-me and playing with her on the swings in the backyard. Jessica and Maxwell are also big into taking walks outside, chasing shadows, gardening and other fun activities that keep the blond beauties moving.

And when it comes to staying slim, Jess simply wants to set a good example for her kids.

"I really do feel this need to be the best role model for my children," she told Good Morning America in January. "I want [Maxwell] to look up to me and want to be like me...I don't want to give her any false perception of what is real and what's important."
