Choosing just one perfect wedding dessert can be tough—and just imagine how hard it is on my sweet tooth!

Part of me wants the traditional tier cake, but then I see all of these decadent dessert bars. Well hey, if there is any day you're allowed to have both, it's your wedding day right? So yes, I'm going for both—a cake and a dessert bar. And let me tell you, I'm psyched (floral arrangements, who?).

To me, the goal for a wedding cake is to be so pretty that you almost don't even want to eat it. Then, you take that bite, and realize it would have been a sin to not have a taste! Luckily, we found the perfect dessert mastermind to do the job: Cakes By Jaymi. Jaymi makes an amazing drunken key lime cake, which my fiancé insisted was a must-have flavor—hence its placement as the bottom layer in our 3-tier cake. The top two will be Jaymi's other specialties, coconut pineapple and—for our guests who prefer their plain-Jane white cake—vanilla bean.

Then my very smart wedding coordinator Liz Seligman (with Island Life Events) made the greatest suggestion: Add mini cupcakes! She told me guests rarely sit down and eat a piece of cake anymore, but they will devour some bite-size treats! So to add more variety for our friends, we are going to serve carrot, chocolate Nutella, salted caramel and strawberry daiquiri mini-cupcakes. Cake lovers are going to live for this table.

Next I wanted to have some kind of do-it-yourself dessert bar. Our venue Islander Resort, A Guy Harvey Outpost in Islamorada, Florida made this decision easy for us. Our reception area is going to have two fire pits nearby, so obviously we have to do a build-your-own S'mores bar!

Liz, Jaymi and I are teaming up to design a one-of-a-kind, kickass S'mores bar: My guests will enjoy the tastiest S'mores of their lives. It's bound to be one of the most memorable parts of the night. The table will be filled with an array of choices to use in their sweet sandwich—think multiple types of chocolate bars, flavored marshmallows and unexpected toppings like, salted caramel and Nutella! Mmm…I'm already in heaven.

Now, I may be going totally overboard, or this just might be the Best. Dessert. Table. Ever. (I'm betting on the latter.) One thing is for sure, all guests need to plan for a day off their diets for our wedding!

Did you do something unique for your wedding dessert, or is there a S'more recipe I need to know about? Please share your sweet suggestions!
