This Dad Makes Lunch Boxes Inspired by His Daughter's Favorite Things and They're Impossibly Cute

Back when we were in grade school, we had a peanut butter and jelly sandwich for lunch every day. And our peanut butter and jelly sandwich looked like a peanut butter and jelly sandwich.

Beau Coffron does things a little differently: The father of three is better know as Lunchbox Dad and he creates whimsical little lunchtime masterpieces inspired by his eldest daughter, Abby's favorite things.

For example: This Despicable Me 2 lunchbox uses a banana, cut in two halves, to make the minions' bodies, two pieces of dried seaweed for their goggles, and bits of white cheese and raises for their eyes.

Beau works full time in San Francisco, but every Sunday night, he gets to work in the kitchen, whipping up a lunchbox inspired by Kermit the Frog theme, or Star Wars, or whatever Abby might be into that particular week.

"I thought it would be a great way to show my daughter that I love her and miss while she was in school," he explained to The Huffington Post.

This lunchbox, inspired by "What Does the Fox Say?" and Abby's obsession with it, includes foxes made of sweet orange peppers and white cheese, as well as "RING" and "DING DING" written in cheese.

 "Some parents watch TV, some go to the gym, some snowboard. I do this," Beau says.

If you're a parent, here's the recipe you've been waiting for: The Frozen lunchbox.

"I'm not even gonna pretend that this didn't take longer than normal," Beau admits. "Honestly, it's one lunch that would be more difficult to reproduce as well. " This recipe involves a special ingredient too: Yummy Dough, which is like Play-Doh you can eat.

Then it's just a piece of tortilla and carrots to make Olaf, cut up string cheese as snow, bread as Elsa's head and peanut butter. Yeah, our peanut butter and jelly sandwiches never looked like this.
