Once reserved for beer and lemonade, pitchers are now being filled with fancy cocktails at the hottest poolside parties. "It's a fun and a classy way to indulge and keep your drink cool," says Paradise City's Molly Sullivan. When the Vegas native lounges at Bare Pool at the Mirage, she sips on fruit mojitos. "We have strawberry mojitos with real strawberries. And when the liquor gets in those strawberries it can be really potent," she reveals. In Sin City, that's a good thing.
When planning your next pool party, ditch the solo cocktails and create pitchers with fancy blends to impress your guests. Here are two of my faves:
Bare Pool Lounge’s Signature Raspberry Mojito
6 oz. Cruzan light rum
4 oz. Rock Candy syrup (simple syrup)
6 lime halves
handful of raspberries
30-40 springs of fresh mint leaves
club soda
Combine in a mixing pitcher. Press 6 lime halves and simple syrup. Add rum, mint leaves, raspberries and crush. Fill with ice, stir and top with club soda.

4 oz. Bartles & Jaymes Pomegranate-Raspberry
2 oz. sake
4 oz. tequila
2 oz. simple syrup
2 oz. triple sec
4 splashes of orange juice
